02. Braised kohlrabi, burnth pear jelly, brazilian nut cream, mung bean miso

03. Pumpkin dumplings, fermented cos lettuce pesto, sundried onions


MAIN COURSE

01. Koji stuffings on courgette, 10 minute demi glaze, herbs

02. Roux baked cauliflower, mustard oil, soy buttermilk, shiso leaves

DESSERT

01. Frozen avokaya parfait, orange granita, vanilla snow
