FERMENTED MANGO CHUTNEY
We came across a box of mangoes that were a bit bruised and on their way to be discarded if not purchased shortly. This box of ripe, sweet and juicy mangoes would form the perfect base for our Fermented Mango Chutney.
We chopped the mangoes and lacto-fermented half and kept the other half fresh to add into our recipe later on for its natural sweetness. We also added thinly sliced onions for a bit of texture and flavored it with a mixture of spices and Geraldton wax - a plant endemic to Australia.
