Radicchio, purplish red leaves that possess great structure and texture and it’s known for its slight bitterness. We rescued some of these amazing leaves from a finished event.
When we got our hands on these radicchio, we thought of the similarities it has with chinese cabbage (napa). Next thing you know we brined them in salt liquid and rub them with a spicy pepper paste made with nectarines, bell peppers, spices and asian seasoning, then left to ferment.
Hence raddichio kimchi came to life.
